Mom's Birthday Dinner...plus loads of oreos for me.

Guess what was on the menu tonight? It was so good I went back to the pot and ate straight out of there after dinner.
The glaze was grainy mustard, real maple syrup, olive oil, salt and a tad brown sugar
baked the salmon at 350 for 15-20 minutes. When I took them out there were perfectly done. I was so thankful because there's been times when I take it out and cut it and I was like "uh oh" different texture here. It was beautiful and this simple recipe was delicious.
Olive oil, lemon juice and zest, sea salt for the broccoli. Baked in the oven at 425 for 25 minutes or until it looks like the picture down below.
I'm so glad it turn out crunchy but soft. By the way, almost all the recipes I have made on this blog I have never made before.
Risotto. I have gone to food heaven. Sauted shiitake mushroom because that's what we had at home.
Took the mushroom out and sweated the onion and toasted the arborio rice then added the chicken broth. Stir stir stir!

The grand finale! Added back the mushrooms, shredded cheese, scallions and a tad butter.
Turn out pretty well. In fact I love this.
I'm pretty sure my mom enjoyed her birthday dinner.

I came home from work and all that physical labor is making me ravenous at night. Had two oreo cheesecake and six oreo cookies. All at 11 at night.
I think the most difficult part about cooking is making sure that the foods finish at the same time and making three different dishes at the same time. Chop broccoli, stir risotto, peak at salmon in the oven...season broccoli, salmon has a light pink color now...
