It's dinner time! I made the middle big plate part of dinner: baked Pollock with lemon, tomato and onion, roasted asparagus, rice with beans and alfredo sauce. My mom made soup and an eggplant salad.


My mom steamed sliced eggplant and tossed it with garlic, sesame seed oil, salt, scallions, and I think that's it. It's so good and I love squishy eggplants.

Mom and I took a walk. I saw a deer in the woods and a goose in someone's backyard. Both just stared at me even when I'm hollering at them. Do they still count as wildlife since they're so accustomed to humans? Tonight I decided to make magic bars or also known as seven layer bars.
- Graham cracker crust,
- chocolate chips,
- white chocolate chip,
- butterscotch chips,
- walnuts,
- shredded coconut
- and condensed milk.
Yum. I might have had a couple pieces plus 4 sheets of graham cracker and some ice cream with it.

Holy crap, I am in heaven.

I prepped tomorrow morning's breakfast: overnight oatmeal!. Basically it's raw oatmeal soaked in yogurt and milk overnight to give this wonderfully chewy and creamy cold oatmeal in the summer. I don't think I can eat anymore hot oatmeal in the 90 degree weather. Okay, equal part yogurt, milk and oats. I also added a dash of vanilla, cinnamon and a pinch of salt.

Just stick it in the fridge and voila! Tomorrow morning just add toppings.

Seriously? Cold, no-cook oatmeal? I'm trying that tonight-- it will go well with my cold-brewed iced coffee tomorrow morning (http://tinyurl.com/coldcoffee). Thanks!
